Utah ProStart Teams from across the state compete in the annual Utah ProStart State Finals for both Culinary and Management.
The culinary competition includes 12- 14 teams from around the state. The rules stipulate each team may only use two burners and no electricity to prepare a three-course meal consisting of a first course, entree and dessert. The teen chefs are scored by floor judges on techniques such as knife skills, mis-en-place, menu execution, intelligent plating, sanitation, uniforms, teamwork and food safety among other things. The tasting judges are comprised of Utah chefs, restaurateurs and industry professionals who taste anonymously and score innovative flavor profiles and recipes according to very strict guidelines. These teens are competing for bragging rights as state champions and their chance to represent as Team Utah at the National ProStart Invitational.
The management competition represents “front-of-the house” skills which must include a business plan, branding, menu design, marketing and critical thinking as teams of four present their unique restaurant concepts to restaurateurs and restaurant professionals from around the state. Management presentations on a national stage have actually been developed into full-blown restaurant concepts. Winners in both Culinary and Management will continue on to represent Utah at the National Championships in Washington DC May 8-10 2019.
